Department: Catering Centre of Excellence

The Catering Centre of Excellence (CCoE) is a relatively new team and a new function and that we are going through an exciting process of transformation in our F&B journey. This position is function as the strategic business leader for Catering Centre of Excellence (CCoE) to develop business strategies and deliver F&B propositions in a cost effective and timely manner, which covers all Cathay Pacific Airways (CX) and Cathay Dragon (KA) inflight Catering Services worldwide.

The person will work closely withProcurement & Aircraft Trading (APD), Customer practice Design ( CED ) and Inflight Service Delivery ( ISD ) and Cathay Pacific Catering Services ( CPCS ) from concept innovation, practiccapability analysis to execution and delivery of all Customer practice initiatives / missions with a vision to deliver the worldclass inflight catering service support, products, and brand elements, while achieving cost and safety targets.

The person will supervise the operations, costing, safety, security and compliance of inflight Catering Services items and lounge services meet the internal requirements of CX and KA as well as International standards. He/she will ensure all quality assurance programme of Inflight Service Delivery (ISD) are adhered to, and warrant that all agreements, contracts and legal documentations with caterers and suppliers comply with CX and KA requirements and standards.

Key Responsibilities & Tasks


       
  • Collaborate with key stakeholders (CED, ISD, CPCS, APD) to ensure alignment of business objectives to corporate’s vision for product and service delivery of CCoE, leverage own culinary skills for new innovation or transformation, and ensure delivery of all initiatives / missions for a sustainable value-added customer practice.

  • To build, maintain and lead a strong, effective and high performing CCoE team to develop business plan, drive business changes, accelerate the delivery of benefits from new initiatives or change projects.

  •    
  • Ensure all business plans are aligned to the business vision, manage all risks, issues and dependencies of the new initiatives, as well as ensure costs are reported and managed and benefits tracked and communicated.

  •    
  • Lead and drive the innovation of new F&B propositions and Research & Development iniatives

  •    
  • Leverage data analystic and consumption data from CED to make adjustment in catering uplift and future menu planning so as to raise the satifactory level of overall customer practice on Food & Beverage.

  •    
  • Ensure efficient allocation of cost, resources and skills to maximize the financial performance of the CCoE.

  •    
  • Fully support quality and safety results including implementation and monitoring of the significant safety and quality activities and processes to ensure continuing compliance with all regulatory requirements, organisational standards and approved procedures.

  •    
  • Overall management of food and beverage services, strategy, standards and delivery to meet the customer proposition, safety standards, and commercial targets.

  •    
  • Overall management of inflight service equipments, logistic and the operational delivery to meet the company strategy and deliver according to the customer proposition, safety standards, security and commercial targets.

  •    
  • Work closely and provide recommendation to APD for the selection of caterers and appointed suppliers, reviewing of significant contractual agreements, and ensure compliance with the company procedures and legal requirements as set out by Procurement.

  •    
  • Accountable for performance management through trend monitoring and implementation of required actions on:

  •    
  • Passengers' satisfaction on all Catering Services related items;

  •    
  • Cost against target on all Catering Services related spend;

  •    
  • Caterer and supplier performance;

  •    
  • Safety and security standard, in relation to atering. Services activities and equipment;

  •    
  • Catering Services staff performance; and

  •    
  • Internal quality assurance programme.

  •    
  • Ensure that correct internal and external communications system, networks, procedures are in place and being followed, enabling all Catering Services-related and required information are communicated to all concerned parties to ensure the best operational safety, and qualitative efficiency.

  •    
  • Accountable for internal staff efficiency, satisfaction, organisation and staff levels of Catering Services section. Ensure smooth operation and adopt best practices that comply with the company's regulations.

  •    
  • Ensure continuing search for improvements and efficiency through means of IT, change management, organisational review and market research.

  •    
  • Ensure knowledge of own function in the Crisis Management. Plan and carry out responsibilities when required.

  •    
  • Participate in Crisis Plan activities and design to ensure consciousness and readiness, as required.
Appropriate qualifications:

       
  • Graduate in Hotel Management or Culinary Institute / School or related disciplines.

  •    
  • Professional qualification in wine is a definite asset

  •    
  • Minimum 10 years' significant work practice in catering industry, preferably in inflight catering business. At least 3 years practice in the capacity as a Catering Manager with a reputable organisaton is desired.

  •    
  • Strong leadership abilities skill with the capability to lead a sizable team to set goals, provide direction, and drive the team towards the achievement of the desired business results.

  •    
  • Agile, Proactive and Strong Change Management skill

  •    
  • Good Project Management skill

  •    
  • Strong stakeholder management and understand the impact of catering on business, internal parties, and customers.

  •    
  • Good negotiation skills

  •    
  • Sound budgeting and financial skills with good knowledge of operating an airline’s catering budget

  •    
  • Good People Management Skills.

  •    
  • Good analytical skills.

  •    
  • Robust knowledge in food and beverage product, technology and application.

  •    
  • Good communication and interpersonal skills with excellent command of written and spoken English.

  •    
  • Computer literacy e.g. MS Excel, PowerPoint, Word.
